At an altitude of 700 metres<\/strong>, the company’s highest vineyard is used to produce a ros\u00e9 wine<\/strong>, entirely from Nebbiolo grapes<\/strong>. The name “Settecento”<\/strong> recalls the (considerable) altitude of the vineyard from which this wine is born.<\/p>\n\t\t\t\t\t\t\t\t<\/div>\n\t\t\t\t

\n\t\t\t\t\t\t\t\t\tThe healthiest bunches are collected in boxes and placed for 12 hours at a temperature of around 4\u00b0 C. The pressing is then carried out and, after a few hours of maceration, the wine is separated and placed in a steel tank where the alcoholic fermentation begins, at a controlled temperature. It remains in steel for approximately 5\/6 months at a temperature below 5\u00b0 C; it is then bottled without having carried out malolactic fermentation.\t\t\t\t\t\t\t\t<\/div>\n\t\t\t\t
